YUM CURRY

DH and I love curry -- especially spicy curry dishes -- and we have it quite often. We are trying to clean out our freezer before moving, so tonight we had a curry with the last of our frozen shrimp (probably won't be buying more anytime soon -- sigh). This recipe was very fast and easy to put together, and healthy too, so I thought I would share! I used serrano and jalapenos with seeds, so our curry was fairly spicy; if you use bell pepper, however, the curry won't be hot at all.

Don't be put off by the long ingredient list. If you use frozen shrimp, take them out to defrost. Start cooking the rice, then chop your vegetables and group them. As your pan heats, measure out your spices into a little bowl together, so you can add them all together -- the recipe will come together quickly, I promise!

The original recipe I found on some link from a BBC article, long lost. I have Americanized the ingredients and changed a few things to suit our taste, so I'm not going to feel bad about losing the source :) Let me know if you try it -- hope you enjoy it as much as I did!

SHRIMP & TOMATO CURRY (4 helpings)
1 tablespoon olive or vegetable oil
1 large onion, chopped
1/2 - 1 cup chopped pepper -- use bell or hot pepper(s) to your taste
3 tablespoons minced fresh ginger
4 - 5 cloves garlic, minced
SPICES: 1 teaspoon sugar, 1 teaspoon mustard seeds, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon turmeric, 1 tablespoon garam masala (Indian spice mix -- I use a mix of cinnamon, coriander, cayenne pepper, cumin, turmeric, cardamom and a bit of fennel -- you can also buy it pre-mixed in the store)
2 teaspoons cider vinegar
1 can (28 oz) whole tomatoes -- chop tomatoes into chunks, but save the liquid!
Shrimp enough for 4 people -- about 3/4 lb (I use the frozen kind, thawed)
Thin slice butter

Heat oil in a large skillet or pan and add the onion and peppers. Sprinkle with salt to taste and cook 8 minutes or so, till the vegetables are soft and the onions begin to color. Stir in the ginger and garlic; cook another minute, till fragrant. Stir in the sugar and spices to mix evenly. Add the vinegar, tomatoes, and some of the liquid from the tomato can. Simmer 4 or 5 minutes to thicken the sauce. Stir in the shrimp; reduce heat to a lowish simmer and cook till the shrimp is hot; add water if it gets too thick. Stir in a thin slice of butter.

Serve over rice; if desired, garnish with chopped cilantro, yoghurt, or chutney.

We often make a similar curry with canned butter beans (sounds weird, tastes great, and is super cheap) -- check out the other recipes on the site as well!

    I am so delighted that you have a fondness for heat. I hate that you missed your dear little brother's graduation party. You might have liked the Cherry Habanero Pepper Jelly over cream cheese on Ritz. The rest of your family was not gung ho about the heat. Camille sort of liked the Apricot Habanero Pepper Jelly over cream cheese on Ritz. It was much sweeter and less hot by far. I normally steer totally clear from hot spicy foods, but I really enjoy the Cherry Habanero Pepper Jelly.

    Despite the lack of popularity of the spicy hot appetizers I brought along, your mom pulled off another grand graduation event. My brood had to miss the official event in UC:( because of a prior commitment, but we made it to the festivities in the yard. Mary Catherine, Anne Elizabeth, Luke, James, and even John Paul joined in joyously with the dancing. Clare provided an ecstatic human speed bump to the carousing teen dancers. Simon added some flare when Tom offered him a hockey stick. After the hockey game between Simon, John Paul, and Tom began, the dancing sort of died out...

    Your home and yard were totally filled with exuberant young people for hours on end. Bill Muses' daughter Jessica came with her new husband Bryce. What a lovely couple! Jessica is just absolutely beautiful and so cheerfully animated. Granddaddy was smitten instantly. He engaged them in extended conversation. I had not seen Bill's children in many years. Rob is so grown up and so much like his daddy. Wow! I also found it amusing that Bill's younger children are so much like him in voice and mannerisms. I know he is sorely missed.

    Camille was swamped with guests and the pleasure of enjoying many of her lady friends that she so rarely gets to see. The event in UC had apparently gone off without a hitch and got rave reviews by all reports. Bill and Doris made it, of course. No lack of stamina there. Grandmother came up with her friend Lydia as a driving companion. Melva drove Granddaddy in her convertible (with the top up:( which she hates but he insists upon. I snuck over to Grammy's for a quick private visit with them while the crowd was still very thick at your house.

    Leonard was gracious enough to afford us a whirlwind round trip despite the fact that he had to do the drive home with a van load of snoozers. I am spent, totally undone. It's already been a full, fun weekend, and I still have one graduation party to go before bedtime! If the thunder I keep hearing actually produces a storm, this evening may be a short damp party. Still, I will have the pleasure of sharing that same Cherry Habanero Pepper Jelly over cream cheese with Ritz appetizer, and this time with a Puerto Rican family that will not consider it hot at all!

Strangely enough, someday you may miss these uprooted days of simple living on a minimal budget in a locale remote from extended family. Savor the blessings you are showered with today.   2. FYI Ginger, turmeric, and curry are associated with reduced risks for heart disease and inflammatory illnesses such as arthritis. You obviously have a taste for a healthy diet, dear niece. Keep up the good work. If you keep at it, you will get to enjoy your DH in prime condition for many years to come! Love ya.
